Guilt-Free Pancakes!

Pancakes? On a childbirth website?  Yep! I’ve been talking to some of my preggo friends about the importance of eating high-protein foods while pregnant, and my husband suggested I post this recipe for high-protein, low-carb pancakes. Yes, these pancakes are guilt-free and SO GOOD!

They only have 5 ingredients… butter, eggs, cottage cheese, self-rising flour and vanilla!

Here are the directions:

Melt 6 TBSP of butter and whip in 1 cup of cottage cheese until smooth.

2 eggs cottage cheese small

Then add the 4 eggs and beat them until smooth.  (Okay, my batter doesn’t look all that smooth, but we just sorta gave up on it for the picture and it still worked great!)

3 eggs beaten small

Then add 1/2 cup self-rising flour and 1 tsp of vanilla. Beat that til…whenever and pour the batter onto a hot griddle. (We use coconut oil on our griddle, btw.)

4 pouring batter small

Cook them til they are bubbly-ish and the edges look done.  (You know what I mean if you’ve ever cooked pancakes, right?) We peek under them to see if they are as brown as we like. Flip them over and cook until you think they are done. (That second side always seems to cook a lot faster, huh?)

5 pancake on griddle small

Then drizzle them with whatever syrup or topping you like. We used pure maple syrup here, but these are also wonderful topped with fresh fruit. Or maple syrup AND fresh fruit!  A little syrup goes a long way, so it doesn’t take much. I kept asking my husband to keep drizzling for the photo, though, so I could catch the syrup pouring out. We drizzled a little bit too much…. 🙂

I didn’t post the pic of the pancakes with tons of syrup, since this is supposed to be guilt-free. 🙂 But anyway, these pancakes are seriously GOOD!  If you make them thin, they almost have a crepe-like texture. If you make them thick, they have a wonderful chewy texture. This recipe will make about 12-14 pancakes.  And you don’t have to tell anyone they are made out of cottage cheese! They’ll never know! I promise!

Cottage Cheese Pancakes (Guilt-Free)

Melt 6 TBSP butter (or you can use 1/2 butter and 1/2 oil)

Pour onto hot griddle, remove and eat. That’s it.  Makes about 12-14.

(I got this recipe from my sister, and I have no idea who she got it from. But it is GOOD.)
